What's Your Fave Low Carb Snack???

  • Angie, if you have a look at the ingredients you just mentioned, you'll see that milk - organic or non - does contain carbohydrates (= glucose).  So a T!D person would have to figure out how many carbs there are per serving...  Think of a glass of milk, straight up: still has carbs, right?

    Your homemade yogourt is probably (and I would say even most certainly) healthier than the store-bought ones because you are not adding anything artificial.  However, I don't think you can count it off as carb-free.

    BTW, this whole reply is based on my personal interpretation of things, not necessarily science! ;P

    Of course it contains carbs.  I worked hard at figuring out the carbs per serving based on ingredients and then agonized a lot over whether the 24-fermentation period did anything do those ingredients to change their grams of carbs in the finished product.  But I never thought it was carb free.  I was just surprised about a couple of people who have said they won't eat yogurt at all as a low-carb snack because it skyrockets their blood sugar.  And I was just wondering about the skyrocketing part and what would cause that.  I guess I wasn't clear enough.

    I love it.  With cut-up apples and walnuts.  Or with blueberries.  Or strawberries.  My (almost) 13 year old loves it, too.  But not the 15 year old with diabetes.  Of course.

  • Based on a 1 cup serving, let's compare 1) Plain Lo-Fat Yogurt 2) A Fruit Variety Yogurt and 3) WHOLE MILK Yogurt

    Lo-Fat Fruit Variety Yogurts are obviously the most difficult for T1's.
    Lo-Fat Plain Yogurt is actually much higher in carbs than Whole Milk Plain Yogurt.
    Stonyfield Whole Milk Plain Yogurt is delicious.  Perhaps you should start making your homemade yogurt with whole milk.

    In addition to the low fat being higher in carbs you also have faster absorbition without the fat.  Having the fat helps the carbs to be more long acting.

  • Hmmm.  This is all very interesting.  I used to make it with whole milk for my younger son, but lowered it to 2% for me because I don't need the extra fat for anything.  Skim doesn't translate to yogurt very well in my experience.  If I could get said 15 year old to show some interest, I'd be more than glad to start making whole milk yogurt for the boys, separate from mine.  Actually, this all started with raw goat milk which I couldn't even stand the smell of.  Long story for another list.

  • That's a excellent reminder.  So freaking much to learn.  Just thinking about number of carbs was a survival mechanism to get out of the hospital.  And I know we've talked fats with the endocrine department because we talked about these really high fat (half butter) evil cookies that a friend gave him a recipe for.  He figured out the carbs for the whole recipe, then divided the recipe such that each cookie equaled 20 carbs, or something like that.  I didn't like the idea, but endocrinology said it was a great snack for him to have after the hard dancing nights because it would help him not drop low overnight.  But he's been off dance all summer and that's becoming a little hazy.  Need to review all my notes.  Keeping him balance for dance is such a balance act that comes down to different carb ratios for supper depending on which particular dance classes he has on a given night.  But starting soon, it's four nights a week and every other Friday night.  Curses.  We have to start back with the midnight and 3 a.m. checks then, too.  I wish these classes where right after school instead of being until 8:45 at night.  Quit thinking!  Quit thinking!  OMG, do you people talk to yourselves like this, too?  and Rants.  Do you go off on rants.  Some innocent person mentions something about fats and carbs in yogurts and the next moment I'm spouting off about dance schedules and overnight blood sugar checks and evil cookies??!!  I'm off my rocker!

  • I eat alot of salads, not just with (or as) meals but also as snacks.  Sometimes I put deli turkey *** or ham in it, sometimes hard boiled eggs and sometimes even miocrowave bacon.  I use a little regular salad dressing, but not the low calorie ones because they have more carbs.  I also stay away from the sweet ones like 1000 Island or Honey Mustard.  Oil and vinegar is a great option.  Sometimes I'll add some cheese or even some nuts, but you have to watch out because they have more carbs.  Spinach salad is of course even healthier than normal lettuce.  The good thing about salads is that two cups, which I guess has under 15g carbs, really fills you up.  Watch out for tomatoes and sweet onions because they too are higher in sugar carbs.
