I will definitely be making them again. The best part is that these did good with my blood sugar (many new things I've tried lately sky rocket my sugars, but this one didn't!). Has anyone else tried a new recipe lately?

Here it is:

Bacon Cheddar Wraps

1 can of crescent rolls

8 slices of bacon, cooked and crumbled

1 cup of sharp cheddar cheese, grated

4 peppadew peppers, chopped (optional)

cooking spray

Instructions: Spray a baking sheet with cooking spray. Preheat oven to 375. Lay crescent rolls out (do not have them rolled together, instead "undo" them so that they lay flat). Lay the cheese, bacon, and peppedew peppers on the crescents. Fold over and make sure to seal the edges. Bake for 20 minutes. Flip over and bake for another 5-10 minutes.

Forum Post: Re: Delicious Lettuce wraps :)

Thanks!
I havent tried it yet but am planning on cooking it tommorrow night so ill let you know how it is! Heres the recipe though in case you wanna try it out too.

salt

12 oz fettuccini (im using wheat)

3TB extra virgin olive oil

1 small onion, very thinly sliced

2 cloves garlic, chopped or sliced

2 med zucchini, cut julienne or matchsticks

2-3 small firm eggplant, about 1 lb, peeled and cut into batons

1 small red bell pepper, seeded, rounded ends trimmed and thinly sliced

generous handful basil leaves, shredded

1/2 cupgrated pecorino, plus more for serving(im using asiago instead)

freshly ground black pepper

8-10 leaves green or red leaf lettuce, shredded

Bring a large pot of water to boil over medium heat. When boiling, salt the water and add the pasta. Cook until just shy of al dente.

Meanwhile, heat 2 tablespoons evoo in large skillet over med heat. Add the onions garlic and vegetables as you chop them, zucchini, eggplant and red pepper. Season vegetables with salt and cover, cook until tender, about 10-12 minutes.

Just before draining the pasta, add about 1 cup starchy cooking liquid to the vegetables. Drain the pasta and add to the vegetables, tossing to combine. Stir in the basil and the cheese and a little black pepper, to taste. Transfer to a serving bowl and top with the shredded lettuce. Serve with an extra sprinkle of cheese and drizzle with the remaining tablespoon of evoo.

Forum Post: Goat Cheese and asparagus fritata

My husband got excited about this recipe and brought it home. I'm basically writing it from memory, it was so easy!

Dice and saute a scallion in an oven-proof skillet (cast iron) over medium heat; when limp, add sliced mushrooms, saute until golden brown. Remove mushrooms, add 6 oz diced fresh asparagus, cook until tender (recipe called for cooking in butter, but I think olive or canola oil will work, too). Remove asparagus from pan.

Whisk 2 eggs per person, milk, salt and pepper to taste; add to pan, arrange vegetables over eggs, cover, and cook over med heat until eggs are set (10-12 minutes).

When eggs are set, remove cover, sprinkle 3 oz goat cheese over eggs, put under broiler (on low?) for 2 min, or eggs are golden brown.

Enjoy!

Forum Post: chicken recipe

Ok, I'll get this started. Know we're all looking for low-carb recipes. Most of the time it isn't to bad, I just can't share in most holiday meals and no pizza.

However today I invented the best No Milk Hot-Chocolate recipe ever. Here is what you need.

2 tsp coconut milk

1 tsp coco powder

8 oz light chocolate soy milk

Set stove to medium heat pour the 8oz light chocolate soy milk into sm. sauce pan, add the chocolate powder and coconut milk.
