Vegetarian/ Vegan Chili

  • This stuff is unbelievable. I make up the recipe though to suit my tastes so it is hard to nail it down exact. You need a crock pot though and need to remember to do the first step the night before.

    1/3 -1/2 cup Bulgar Wheat Soak in bowl of water overnight. (I mix my water with a little Tabasco for extra kick.)

    1 - Small red onion (Chopped)

    2 - 3 Jalapeno Peppers (Chopped)

    2 - Chili Peppers (Chopped/Optional)

    1 - Green Bell Pepper (Chopped)

    1 - Clove of Garlic (Chopped)

    Fry all of these ingredients in a frying pan with canola/vegetable oil until onions are softish. (basically the frying starts the process of releasing the flavor of everything)

    2 - 16 oz cans Red Kidney Beans

    2 - 16 oz cans Black Beans

    2 - 32 oz Cans of Diced Tomatoes (try not to get the ones with Italian Seasoning)

    1 - 16 or 32 oz can of Tomato Puree (I use this to dilute the chili if it seems to thick and also depends on the size of the crock pot you use)

    Combine everything into the crock pot, and place on low heat.

    Other ingredients to add to your liking

    2 tsp. Chili Pepper

    1 tsp. Cayenne Pepper

    Pinch of Oregano

    Optional: Crushed red pepper.... I tend to use alot of this.

    Tabasco Sauce for extra kick, again your choice. Heat to you are content.
